Cream of Asparagus Soup
Recipe made with Snel cooking cream
Ingredients
- 500g green asparagus.
- ½ leek.
- 150g butter.
- salt / pepper.
- 500g cream.
- 200g potatoes.
Serves 4
30 minutes
Preparation
- Melt the butter in a saucepan, and use this to gently fry the leek, potatoes and chopped asparagus.
- Season to taste.
- Once it has all browned, cover in water and let it cook through for around 15 minutes.
- Blend, and add the cream.
Decoration
Ball of mascarpone cheese, and asparagus shoots.
