Cream of Asparagus Soup

Recipe made with Snel cooking cream

Ingredients

  • 500g green asparagus.
  • ½ leek.
  • 150g butter.
  • salt / pepper.
  • 500g cream.
  • 200g potatoes.

Serves 4

30 minutes

Preparation

  1. Melt the butter in a saucepan, and use this to gently fry the leek, potatoes and chopped asparagus.
  2. Season to taste.
  3. Once it has all browned, cover in water and let it cook through for around 15 minutes.
  4. Blend, and add the cream.

Decoration

Ball of mascarpone cheese, and asparagus shoots.
